Avocado and condensed milk smoothie is one of the most loved desserts in Vietnam. Inspired by this rich dessert, we created the ultimate breakfast ice cream. It might sound odd to add avocado into sweet dishes but the rich and creamy texture of this fruit makes it the perfect ice cream base. This easy vegan ice cream recipe has only five ingredients and if you have a sweet tooth like we do, there is no shame in having this healthy dessert for breakfast!

Ingredients

2 ripe avocados

1 ripe banana

1 1/2 cup almond milk

3-4 tbsp matcha powder

3-4 tbsp maple syrup

Method

1. Peel and freeze the banana and avocados over night.

2. In a high speed blender, add all of the ingredients.

3. Blend until smooth.

4. At this stage, you can have soft serve ice cream! You can also either add the mixture in an ice cream machine or if you don't have one, simply put in the freezer and stir the mixture every 15-20 minutes for about an hour. When ready to be served, allow defrosting for at least 20 minutes before scooping.

5. Serve with whatever you'd like. We served ours with pancake, shredded coconut and toasted almond flakes.
